Recipe: Tomato Basil Gastrique

1 cup granulated sugar
3/4 cup cider vinegar
1/4 cup bourbon

2 cups chopped cherry tomatoes
1 cup chopped basil
1/4 to 1/2 tsp chili powder

Heat sugar until it starts to caramelize
Stir in vinegar and bourbon
Bring to boil then let simmer to reduce slightly
Add tomatoes, basil and chili powder
Continue to simmer until desired consistency is reached (about 15 - 20 minutes)
